Microgreens are greens that are harvested prematurely in their cotyledon or first true leaf stage of its life cycle. This allows the greens to be super tender, packed full of intense flavors, and contain more nutrients than traditional mature greens. The University of Maryland College of Agriculture and Natural Resources research ultimately discovered that the microgreens contained four to 40 times more nutrients than their mature counterparts. Over the past few years, they have been popularized by many chefs and health enthusiast. This is mainly a result because of their vast visual and nutritional appeals.
